2 cans yellow/white corn (mixed and drained)
1 can Rotel Tomatoes (drained)
2 pkg. cream cheese (8 oz each)
Finely chopped cilantro (to taste)
1-2 tablespoons chili powder
1-2 tablespoons garlic powder
Mix all ingredients in crock pot until warm and smooth. Stir often. It is suggested to use a low to medium setting to prevent burnt edges.
The recipe used at the meeting actually used 2 ½ cans of corn because of the thickness of the dip compared to the 2 can recipe. The chili powder and garlic amounts can vary according to the taste buds while adding a little red pepper can add some spice to the recipe.
